Unfortunately, it's still winter. Often times, in the winter, the trend is to eat less fresh vegetables. But, don't worry, you don't have to fall into this trap. You can still get plenty of vegetables in warm dishes. If you enjoy making pot roast, add more vegetables than the traditional carrots and potatoes. You can also include crushed tomatoes, green beans, turnips, celery root and parsnips. Do the same with soups. If you make a chicken or beef soup, add carrots, celery, mushrooms and peas. These are easy and effective ways to get your daily intake of vegetables, and warm your toes.
